- Hiyamugi are thin dried Japanese noodles made of wheat.
- They are similar to but slightly thicker than the thinnest Japanese noodle type called somen
- Usually served in cold Hiyamugi noodles (cold wheat) are long and thin in appearance and slippery in texture.
- Hiyamugi are commonly served on top of a bed of ice with accompaniments such as wasabi and tsuyu dipping sauce on the side.
