The Olives are inedible raw and have to be cured before they can be eaten. That’s the reason olives are packed in oil or salted water or vinegar before they are consumed. There are many other ways of curing olives; however; canned black olives are mostly cured in a saltwater brine.
Black Olives are olives that have been left on the tree to mature and ripen. They are usually picked late in the year, November to December.They will then be brined or salted to season and pickle them. Black Olives have a sweeter, fuller flavour than green olives, though they lack the tartness and zing.
