The green onions are cut into lengths and then seasoned with a spicy paste made from a mixture of Korean chili flakes (gochugaru), garlic, ginger, fish sauce or salted shrimp, sugar, and sometimes other ingredients like soy sauce or sesame seeds. The kimchi is then fermented to develop its signature tangy flavor.

Fermentation:
