A very different Korean kimchi dish is called Chonggak Kimchi, which in fact is ‘ponytail radish kimchi’.

Chonggak kimchi (총각김치) is another popular type of kimchi in Korea. It’s made with chonggak mu (총각무), which is a small variety of white radish with long leafy stems. This small variety is firmer and crunchier than the large varieties of white radishes. Chonggak mu isalso called altari mu (알타리무).

You can serve chonggak kimchi whole or cut into smaller pieces. Most Koreans enjoy picking up a whole radish with chopsticks, and biting off a piece at a time making loud crunching noises. Fun and delicious!

【Health benefits of kimchi】
✅ Kimchi is prized for its nutritional benefits. Because kimchi is a vegetable-based dish, it contains ample fiber, vitamins, and minerals, and is low in calories.1 Lactobacillus, the same bacteria used to make yogurt, is used in the fermentation of kimchi, and it's valued for its ability to aid in digestion and keep a healthy balance of bacteria in the gut. The average Korean consumes nearly 40 pounds of kimchi per year, and many attribute the good health of Korea's citizens to the many benefits of kimchi.

【Storage method】
✅  Kimchi will keep well in the fridge for several months. Keep it in fridge after you have received the kimchi.
