Cooking Instruction:
- weight out 200g of the dumpling ball
- boil a lot of water, it is fine to use a lot of water but never ok to use less water as the dumpling balls rise, there won't be enough space to prevent sticking
- Bring the water to a boil in a pot, then slowly add the dumpling balls while stirring gently (slow stirring prevents breaking and sticking)
- Once the pearls float to the surface, reduce to medium heat and time for 3 minutes, stirring occasionally to prevent sticking
- After 3 minutes, turn off the heat, cover the pot, and let it sit for 3 minutes (you can adjust the resting time to 3-5 minutes based on the transparency of the pearls)
- Rinse the pearls with clean water 2-3 times until there’s no residue, then soak them in sugar water
- FOR THE SMALLER PEARLS: adjust the cooking time to 2 minutes and resting time to 2 minutes
